Hominy

Nixtamalization /nɪʃtəməlaɪˈzeɪʃən/ typically refers to a process for the preparation of maize (corn), or other grain, in which the corn is soaked and cooked in an alkaline solution, usually limewater (but sometimes wood ash lye[1]) washed, and then hulled. This process, originating in Mexico, is famously known to remove up to 97-100% of aflatoxins from mycotoxincontaminated corn.[2] The term can also refer to the removal via an alkali process of the pericarp from other grains such as sorghum.

Here's another one from Pressure Luck: Beef With Broccoli. I've done it and it's easy and delicious. As Luck says, if you want your broccoli more crisp, put it in last and saute it a couple minutes.

Posole is amazing. I do not know what is wrong with them. Someone force them to eat bad canned hominy or something? 

PS - if you've ever eaten a corn-nut, that's just deep-fried hominy. If you've ever had grits, that's ground hominy (and delicious with shrimp.) 

We serve our posole with a whole bunch of things to crumble on top. Avocado, queso fresco, tortilla chips, grated radish. It's seriously delicious. You're all missing out.

So this thread made me so hungry I'm doing up a batch right now. 

I had some leftover chicken and pork butt I needed to use up, and this is exactly what it needed to be.

So it's the same thing as grits?

In that case, I've eaten lots of hominy.  Very hot, real butter topping it. Can't be beat.
