I make it the old-fashioned way, by hand.

Here's my recipe:

4 cups of stoneground 100% whole wheat flour (plus 3/4 cup for kneading)
1 1/2 cups of water
1 package of active dry yeast
1 teaspoon maple syrup

Make sure the flour is at room temperature.  Microwave the water (with maple syrup mixed in) for one minute at high power, then add the yeast and stir until blended.  Add that to the flour and mix it.  Using about 3/4 cup flour, add a bit at a time and knead - the whole process only takes about 8 minutes.  Add some olive oil to moisten, and let the dough rest for 50 minutes, then punch down and let rest for 30 minutes in an oiled loaf pan.  Preheat the oven to 350 and bake for 47 minutes.

It's a bit denser (yes, that's a word) than white bread, but very good.

Sure - that makes sense.

A lot of what I cook and like is peasant food, so this fits right in. I find it's generally simple, but hearty and satisfying.

Store bought bread is just air and preservatives. We make ours by hand. Have you tried some of the old grains? Spelt, Einkorn?

I tried a little of those, but they're a fair amount more expensive.

And I bought a mill to try to grind my own flour, but it didn't work well.  So now I use Bob's Red Mill whole wheat flour - it's stoneground and reasonably priced.

Bob’s has Spelt and a good variety of others, but can’t always be found in the store.
